Reason for freezing of coconut oil in winter | Coconut oil consists of many saturated fatty acids
We generally observe the coconut oil change into solid state from liquid state in the winter season but the vegetable oil used for cooking won’t freeze. The reason for this is that air in the winter season gets cooled and so the liquids change into solids and get freeze. There are fatty acids and glycerin in oils. There are saturated and unsaturated fatty acids in fatty acids. If there are more unsaturated fatty acids in the oils, then they won’t freeze in winter season. The freezing point is the temperature at which the substance changes from liquid state to solid state. There are 90% saturated fatty acids in the coconut oil and so it easily freezes when the temperature reduces in the atmosphere. Ground nut oil, sun flower oil etc contain more unsaturated fatty acids and is they won’t freeze easily.
